  1. Almond flour: made from ground almonds, it is one of the favorite baking flours because it can be substituted 1:1 in place of regular flour. However, you may want to add an extra egg when substituting for more density. Almond flour is an excellent source of iron, magnesium, calcium, potassium, copper, and manganese as well as Vitamin E.

  2. Arrowroot flour: mainly used for thickening and in combination with coconut, almond, or tapioca, arrowroot flour is high in potassium, B Vitamins, and and iron.

  3. Coconut flour: made from dried coconut, coconut flour is very similar to regular flour although it does absorb more water than regular flour or almond flour. Coconut flour is a favorite because of its texture and nutritional benefits to include high saturated fat (lauric acid), which provides energy, and helps lower bad cholesterol (LDL) not to mention high in fiber, which is great for digestion.

  4. Tigernut flour: definitely not made from nuts, tigernuts are actually tiny root vegetables with a sweet nutty flavor and are of a more coarse texture when ground. A quarter cup has approximately 10 grams of fiber and excellent for lowering cholesterol. Tigernut flour packed with monounsaturated fat, iron, phosphorus, potassium and vitamins E and C.
