My Paleo Waldorf Salad
This is one of my favorite salads that even the not so conscious healthy eaters and Paleo foodies will enjoy.
2 cups chopped green and/or red organic apple
2 cups chopped organic celery
1 cup organic green grapes sliced in half
½ cup NUCO Coconut Vegan Mayo
½ cup roasted chopped walnuts
¼ cup unsweetened shredded coconut flakes
1 tablespoon of organic lemon juice
Sea Salt to taste
Place all ingredients into a large bowl and mix well.
Serve on a bed of green lettuce leaves and enjoy!
Options: Eliminate walnuts if you are on a strict anti-inflammatory eating plan or AIP (autoimmune protocol)
